State of the State - February 2019
It has been a gray, wet winter, but despite nature's persistent attempts to throw us all into seasonal affective disorder, we have fought back with diligence, innovation, and re-engaging with the community that has supported us now for 7 strong years! In the roastery, the guys have hooked up an exciting open source software program called Artisan to our 15 kilo Loring Falcon roaster. This program has allowed us to really dial in the profiles of all our coffees to a degree we never have before. It has turned some of our assumptions about roasting on their head. In the last 2 months, we have noticed far greater clarity in each coffee we roast. It's a great reminder that even for us at Second State, there is always room for improvement, that there's always a second state!

Happy 2019 from your favorite coffee people! We have partial amnesia from the string of holidays incurred over the previous several weeks, but that's ok. The year is off to a fresh start.

It's that time of year. Summer, for all intents and purposes, is over. We dodged the first big Atlantic hurricane, with Charleston breathing a giant, collective sigh of relief. The whites are away, and it's time for Autumn.
