We met Andres in July 2025 and learned a lot about his techniques, the farm he manages, and his hopes for coffee. About this Coffee
A note from Andres:
“I enjoyed doing this coffee because it was not only easy, it also saved me working steps and water. I let the cherries ferment for 96 hours, then I dried it in silos and after that in drying beds for a total of 204 hours”. Its flavor is a result of a new knowledge and taking the risk of experimentation.
How this coffee was produced
Coffee is hand-picked and sorted, where 95% are fully ripe. The selection process is hours and hours of labor intensive work. At their working station, Andres trains his small team to identify the perfect quality fruit before they are fermented in cherry in open tanks for 96 hours. The initial drying phase takes place in sun bed driers for 12 days, followed by mechanical dryers until reaching 12% moisture content
