Colombia Honey Pink Borbon

Size

The famed pink-hued fruit "Pink Bourbon" garnered a lot of attention under the folklore that it was a lucky hybrid of Colombian Red Bourbon and Yellow Bourbon varietals. The truth was quite a surprise. Despite its name and original story, the Pink Bourbon plant was genetically tested and determined to be an Ethiopian landrace varietal.

It just so happens that Colombia is a perfect playground for this Ethiopian coffee, lending to exceptional cups of coffee with flavors of sweet caramel, delicate florals, and hints of dried and tropical fruits.

We are excited to share this particularly sweet and juicy Pink Bourbon from our pals at Forest Coffee!

About this Coffee

About the producers

Edier Perdomo has been involved in coffee "since his first thoughts." He started his own project in the Vereda Chillurco back in 2014, and since then, he has been growing his genetic materials to offer 8 different varieties of coffee. In 2018, he started began focusing primarily on processes. This lot is a great representation of his focus, consistency, and discipline over the years.

Diego Horta is a traditional coffee maker. His parents are coffee growers, and along with him, they have been evolving their methods from traditional to specialty. When Diego finished school, he decided to specialize in coffee because he saw the need to seek an economic activity that would guarantee tranquility for his family. Diego is currently a producer, taster, and barista in the town square, where he sells a portion of his coffee.

About this coffee:

The journey begins with a meticulous selection process, ensuring exceptional quality. The beans then undergo a 24-hour pre-fermentation in cherry, followed by a 36-hour anaerobic fermentation in mucilage, enhancing their natural profile. The drying takes place over 15 days resulting in a vibrant and complex flavor showcasing this varietal and the producers skill in processing
