While our company is, in fact, in its second iteration (formerly known as Black Tap coffee), we like to joke that your "first state" is decaffeinated and your '"second state" is caffeinated. What "Second State" really means - to us - is that we are never complacent with where we are and that we are always searching for a new level of knowledge, quality, improvement, & performance - a second state of being.
Each lot of coffee is totally unique in flavor but there's something for everyone. To help you pick, we denote our coffees with a Traditional-Modern scale. If marked more towards "Traditional", you can expect typical coffee flavors (nutty, chocolatey) and a balanced acidity. We like these for most home espresso brewing.
With coffees marked more towards "Modern", you can expect flavors like citrus, floral, fruit, etc. The most modern coffees will often portray themselves as juicy, boldly fruity, wine-like, funky, and adventurous.

We roast each bean on our Loring s15 Falcon to bring out its best qualities. To highlight as much origin and terroir as possible, the majority of our coffees are developed on the light to medium spectrum. Our boldest, "darkest" roast (closer to a medium) in retail stores is our Heavy Weight Blend. On our website only, our most traditional coffees and "darkest" blends are Stealth and Prizefighter.
We roast 5 days a week and pack to order Monday through Friday!
We feature classes here on our website listed as Caffeinated Classroom or on our EventBrite. All classes and trainings are held at our West Ashley location on Sundays. Coming soon: Training center & more classes!
Private, curated classes are available for groups! We offer Intro to Coffee, Sensory Training, Barista Fundamentals, Intro to Brewing, Latte Art, Bar Skills Consultations, and more!

We prefer to base our green coffee purchases on quality over specific 'marketable' certifications. Fair Trade guarantees producers $1.80 per pound of coffee. We pay well over this price per pound for our coffees, even up to 10x-15x more per pound for our microlots.
Although most coffee producers engage in organic, sustainable, and biodynamic agricultural practices, many do not have the funding, infrastructure, or desire to receive annual certifications, narrowing their market and their profits.
