    Natural Guamo begins in the mountains of Manzanares, Caldas, where producers in Forest Coffee's Reforest Project carefully harvest ripe Caturra cherries before delivering them to El Vergel Estate for processing. Rather than each producer handling fermentation individually, the cherries are centrally processed using Forest Coffee's fermentation protocols, creating remarkable consistency while allowing farmers to focus on producing exceptional fruit and reducing their overall costs.

    The coffee undergoes a 36-hour anaerobic pre-fermentation before spending 96 hours fermenting in sealed tanks. It is then mechanically dried slowly with controlled humidity over seven days to achieve high complexity and rich sweetness.

    The Reforest Project Goals
    • Restore ecosystems and enhance biodiversity.
    • Provide shade to coffee crops by planting native trees like Guamo, Payandé, and Jagua. This helps mitigate rising temperatures and increasing cup quality trough a healthier plant.
    • Improve soil quality, boosting water retention and preventing erosion.
    • Support producers by helping them combat severe drought and rising costs of agriculture

    Fermenting in an environment without oxygen to create deeper fruit flavors, enhanced sweetness, and a more expressive cup. Extended drying times and fermentation techniques can help control quality and prevent off-flavors.

    El Vergel

    Finca El Vergel is one of the oldest single estates in the Tolima region of Colombia, run by second generation producers Elias and Shady Bayter with the help of their mother Martha. In 2019, Forest Coffee was created to connect Colombian producers directly with international roasters while pushing quality through innovation, education, and sustainability. They partner with more than 250 coffee-growing families across Colombia, connecting producers directly with specialty roasters through transparent pricing, innovative processing, and long-term sustainability initiatives.
