It is uncommon to see female-owned washing stations and coffee lots in this typically male-dominated sector. Yismashewa's expertise in agricultural cultivation, direct procurement of premium green coffee beans from farmers, adept management of washing station operations, and efficient distribution to exporters culminated in the ability to establish her own station.
Idido:refers to a specific area of the Yirgacheffe region known for producing high quality and distinctive coffees often characterized by complex flavor, bright acid, floral and fruity notes.
Anaerobic Natural: Anaerobic indicates that additional, intentional steps were taken in the production of this coffee to ferment the coffee in an anoxic environment (free of oxygen)- usually a sealed drum with an airlock. As fermentation progresses, CO2 displaces the oxygen - when done in a controlled way, this tends to showcase positive wine-like character, intensifying fruit flavors and acidity. Natural indicates that the coffee was processed with the skin of the cherry in tact - lending to more fruit character and, comparatively to a washed, a slightly fuller bodied cup.
