This new harvest comes from 211 smallholder farms and is processed at Biloya Washing Station. Here, ripe coffee cherries are sorted, depulped, and fermented for 36-72 hours in cement tanks. The fermented coffee is washed and soaked in clean water, dried for 18-21 days, and hulled at dry mill before being bagged for export. This station's topography and the post harvest processing techniques lend to a clean, sweet cup.
